Recipe: South of the Border Sandwiches

Mom wanted this recipe for the sandwiches we made over conference weekend so I thought I would just post it for everyone. It's a pretty quick and easy recipe and it's quite tasty.

South of the Border Sandwiches
  • 8 sandwich rolls or 1 loaf of French bread
  • 1/2 cup chopped olives
  • 1/2 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/4 tsp. salt
  • 1/2 cup mayo
  • 1/3 cup sour cream
  • 1/3 cup green onions, chopped (I like it better without these)
  • 3/4 to 1 lb. thinly sliced turkey (from the deli is best, but any lunch meat turkey works)
  • 2 tomatoes, sliced
  • 2 avocados, sliced
  • 3/4 cup cheddar cheese
  • 3/4 cup pepper jack or Monterrey jack cheese

Preheat oven to 350ยบ. Mix all ingredients except turkey, tomatoes, avocados, and cheese. Put sliced rolls on baking sheet. Spread half the mixture on bottom half of rolls. Layer turkey, tomatoes and avocados on rolls. Spread remainder of mixture on turkey, tomatoes, and avocados. Top with cheese and close sandwiches. Bake for 15 minutes or until heated through.
